Rosie, I had put the thread in the wrong place & Karen was nice enough to move it for me. As long as people see it somewhere on this website, that's what matters. For a turkey, you would mix the brine in a clean / sanitized 5 gallon bucket. No kidding. Then for the bag, use a large trash can bag (obviously new). For a 15-18 lb turkey, the bag would absolutely need to be bigger than 13 gal. Put the turkey in the bag first, then before pouring the brine in, put the turkey in bag in a ample size container to contain any leaks in the bag. Then pour in the love! Seal the bag & if you don't have space in the fridge, me personally would get creative with other ways to keep it cold.... Like filling the kitchen sink (or even a clean bathtub) with ice cubes & a little cold water. (an ice bath). As long as it stays below a certain temperature, you're golden!
