I will tell you how I made that stuffed cabbage soup...
But it isn't an official recipe ..
It was so quick and easy -- from memory
Smallish cabbage.,cored, cut in quarters and separated the leaves
Pound chopped beef - I used 85/15 but 80/20 would work..leaner than that .I think would be too hard plus want the grease!
1 Can Hunts Sauce (Campbell soup sized)
2.of those cardboard style cartons Progresso chicken broth ( 32 ounces each) would that be 4 cans??
Med- large- onion - chopped
3-4 decent sized garlic cloves - minced ( they were fat!)
Stick butter
Cup Uncle Bens LONG COOKING rice ( quicker cooking minute rice type breaks down),
Olive oil
Cup grated fresh Parmesan cheese ( not the dried stuff)
Tablespoon Celery seed ( not sure this made a difference)
COarse Kosher Salt
Pepper
In big soup pot put just enough olive oil to fry the garlic and onion...
I got that going and added the raw rice and sauted it all.. CAREFUL GARLIC BURNS--STIR and stand there
Added the beef -- stir..stir...stir... getting it all pretty well browned
Add all the broth
Add the tomato sauce
Add the cabbage
Add salt..not a ton because of salty broth ..( can add more to taste later )
Pepper
Cover...cook about an hour..hour and half..stare every now and again
When done..stir in cheese and butter
That's it!
Less than 10 min to prep
And one pot to clean
It was REALLY good

Next time Inwil use about a quarter pound of ground sausage and 3/4 beef just for the heck of it..but I bet it won't taste like stuffed cabbage
