We gobble the fuyu like candy...lol. I like the Hachiya uncooked also, but usually make Persimmon Pudding or Persimmon Cookies. I'll have to experiment this year with Gluten Free cookie recipes....

Fuyu persimmons were touted here some years ago as the new big cash crop to be growing here, but so many expect to grow them, water them, pay labor for care and picking and then pay the packinghouse (without doing the work themselves) that they found they were only making about $.05 per pound and a lot of the orchards were let go...shame..they're so beautiful, besides being so tasty.
Years ago when we were living in Northern California, we stumbled onto an old abandoned homesite with a huge Hachiya persimmon tree. Thereafter, every year we would go and pick the persimmons. Then one year we found that somebody else had found 'our' persimmon tree and it became a challenge each year to wait until the 'simmons were ready to pick and yet beat these interlopers to the tree...lol.
When we bought land here 30 years ago, it was the first thing I planted.
