Well catching up and everything sounds so good. Drooling

As for me, the dinner plans got canceled on Thursday night. Husband had to work over. Sad Shrug! Goes with the territory and nature of his job. So I was left to my own devices, that bottle of red (oh darn--right? Big Grin Whistling ) and new episodes of Grace and Frankie on Netflix. So I resorted to one of my old standbys called 6 Can Tex-Mex Chicken Soup for dinner! Great recipe anyone can make using 6 canned ingredients from their pantry:
1 can ((15 oz) whole kernel corn; drained
1 can chunked chicken
1 can (15 oz) black beans; drained and rinsed
1 can (10 oz) Mexican style diced tomatoes with green chilies
2 cans of chicken broth (14.5 oz each)

Drain and rinse what needs to be. Dump everything in your pot. Heat through. Season up to your liking with your favorite spices, salsa/hot sauce, etc. and top with shredded cheddar cheese and tortilla chips.

Yesterday we had errands to run so it was a highly satisfying burrito from my local yocal food cart. Salad and left over soup later that evening.

Today is a pot roast. Husband is off and is cooking it on the grill. He has a way where he sets up the grill for indirect heat and uses it as a 'roaster'. So he seasoned and seared the roast with Italian herbs and now it is braising it in beef broth and red wine and onions. He'll throw in some carrots, diced tomatoes, and mushrooms when it is time. We should be eating around 3:00. I'll probably steam some broccoli and boil some penne pasta or make some rice for a side.
