I don't have children. That, however, has never precluded me from silently questioning the wisdom of some of those who do. I guess that is the only comment I can make on the subject and my experience with the matter when I see parents and their offspring.

I will say I have one major pet peeve and that is when friends or neighbors bring their sick children with crusty and runny noses and chest-y coughs around me or to me my home. Grumbling Rolling my eyes. Just because their little one has a cold and mom/dad are immune to it or have already gotten over it DOES NOT mean the rest of us are! We don't want it.

It really irks me because as an Epileptic I personally can not take antihistamines or over the counter cold meds as they induce seizures so I have to suffer. (I can take antibiotics.) My husband has to have a doctor's excuse if he misses work which means he has to PAY to go to the doctor if he gets sick or drag him self to work and be miserable and give it to other people----including me.

Yet, despite my explaining the above, I'm the rude, kid-hating, selfish one when I ask, "Are you and your children well and cold-free? If not, could you stay home and we reschedule?" BEFORE they come over. Shrug! D'Oh!

Welcome! LUVTOBAKE . Nice to have you with us. That pasta with the chicken and mushrooms sounds wonderful and so tasty.

Sean and Tom rather jealous of that salad and soup you had. Sounds so yummy and fresh. Rosie, sorry the Mexican wasn't up to par but still good as it was something different. The husband and I finished the pasta and mushroom marinara last night and had salad. Today we will finish the tacos and some chicken tortilla soup. THEN we can shop and cook some new things. Hurray!

I don't mind eating the left overs though. Kind of works for today as we have a few home projects to do and I am lucky enough to have wrangled his help for a few hours out in the yard with trimming some of my large and more gnarly and aggressive agaves. I need some literal 'man power' to do it. In exchange I said he could go fishing with a friend of his tonight. Tomorrow we will shop and cook and enjoy time together in the kitchen.

Since we all have 'busy days' this is as close to an 'instant' soup as I get. Using left over chicken or a store bought Rotisserie and instant rice makes it super easy.

AG'S SOUP OF THE DAY Smiling CHICKEN & RICE SOUP

Ingredients:

6 cups chicken broth (can use low sodium)
2 ribs celery;diced
2 medium carrots; peeled and sliced
2 cups chicken; COOKED and shredded
1 cup dry instant rice
1/2 cup fresh chives; minced
juice of 1/2 a lemon
salt and pepper to taste

Instructions

1. Bring broth, celery and carrots to boil in a large soup pot. Reduce the heat and let simmer about 5-7 minutes.

2. Add chicken and rice; simmer 5 minutes.

3. Stir in chives and lemon juice; season with salt and pepper and serve immediately.

Makes 7.5 cups/4 servings
306 Calories per serving
7G fat
26G carb
1G fiber
35G protein

I like this with just a spinach and mushroom salad on the side or mini cheddar scones. I think I gave the scone recipe a few back. If not I can post again.
