If I bake, or roast chicken I always dry the skin with paper towels. It's water on the skin that will make it soggy and not crisply. (According to Julia Child) Smiling Then I brush it liberally with oil or butter and season it. It gets nice and brown and crispy.

Tonight I'm having oven baked chicken thighs, steamed broccoli, and roasted Parsnips! (Yes they had them in the store finally) Finishing off the Sauvignon Blanc.
Politicians are like diapers, they need to be changed often, and for the same reason.
