I love baking bread, see my name, and have often wondered how we wound up with the modern idea of it. In other countries they still have the real thing. I just started reading this, I'm on page 16 of the introduction, and it is very political. It's interesting, though, for sure. I'm hoping it will include some lighter history once I get into the actual chapters.
