Here is a yummy salad, if you are so inclined. I think it's pretty good. One of the vendor gals brought it to the vendor potluck last fall.
Wild Rice and Cranberry salad
DRESSING
3/4 cup chopped cranberries
1/4 cup cranberry juice
1 T. sugar
2 minced garlic cloves
3 T. cider vinegar
1 1/2 T. EVOO
1 tsp. kosher salt
1 tsp. freshly ground pepper
SALAD
2 cups cooked wild rice (1/2 cup uncooked)
1 cup orzo (1/2 cup uncooked rice shaped pasta)
1/2 cup finely chopped each red and yellow bell pepper
1/2 cup thinly sliced green onions
2 T. chopped fresh parsley
Dressing: Combine first 4 ingredients in small saucepan. Bring to a boil,, cook 2 minutes. Remove from heat. Stir in vinegar, oil, salt and pepper. Chill.
