Eggplant is very good in curries. It also is super good in Cajun seafood dishes. It's great baked stuffed with seafood, sausage crumbles or ground beef. It's marvelous chopped up in spaghetti sauces. I love, love, LOVE eggplant. I have a low-carb food blog I've been running for 10 years now. Because I love eggplants so much, I have tons of recipes for it there (low-carb, of course). If you go here and type Eggplant in the search box, it will bring a bunch of recipes up for you with that word in the title, ingredient list or in the narrative for the recipe.
