it is depending on amaryllis strain, some need dormancy , some can be green all year around, and bloom ones in a year. I have " apple blossom" that stays green all year around, and after the winter it blooms. Please note that for that u need a hot temperature and a lot of light all year around. I'm not sure of zone 8 is enough, maybe this occurs only in zone 10 or higher.
I never stop watering my amaryllis, even those that goes dormant, till all leaves are gone.
