South Dakota, hmmm, okay. Beets grow like crazy up there. Mints, catmints? I think, depends on where but, maybe a small issue with dryness, water. Thyme can live in snow, not ice. What do I grow in winter? Parsley, fennel, mints, carrots and other root foods, winter squash, kale, cabbage family plants, cilantro/coriander, lavendar, here brain get to work. ah! tarragon- all will be your summer plants. There are also the 'herbs' type weeds that survive up there tho I don't know them off hand.
Check on the average of warm summer days and the general temps for that summer in your area to be. Then you check the plants dtm to see if it has long enough to mature...
