Rosie, I meant it would stain the rest of the food! (and it did stain the squash. Just sayin'...). I wouldn't want purple steak.
It's hard to get good winter squash in summer. A few weeks ago I ordered a spaghetti squash from Instacart. The one I got wasn't much bigger than a grapefruit.
If you want a good acorn squash recipe, this one is my all time favorite!
