I would have guessed that was an Anemone instead of a poppy, but didn't know any of either one were evergreen! What a nice bonus. I guess it would cook in Texas. Both are short-lived plants here because they can't survive the summer heat.

Aaaaah, there we go. I did some digging, and apparently they're Anemone coronaria 'Blue Poppy'. So you're right. I thought they were actual poppies. Hilarious!

Either way, I'm impressed with how tough they are. Everything in my garden generally dies back during the winter. Other than the brussel's sprouts (which I typically grow into winter), they were the only thing that stayed in good shape. So I had an entirely dead garden, buried in snow and frozen, except for these little Anemones who didn't seem bothered by it whatsoever. Literally the only visible difference was the lack of blooms over winter, but otherwise, they looked the same. I have another one planted a few feet away from this one, and it also didn't seem bothered at all. Tough little guys!
Слава Україні! Slava Ukraini! Glory to Ukraine!
