I've done them both ways - it works okay to stuff them and freeze them, and is certainly handy to just take them out of the freezer and cook them, but the peppers always seemed to get overcooked by the time the "insides" were hot and melty so I've settled on doing the halves plain. When I take them out I put the filling in while the halves are still frozen, then bake for about 20 minutes and the peppers are nearly the same as when using fresh ones. Smiling
