AG, looks like a great place to hike, too bad about the large cactus.

Looks like everyone ate well again last night.

I made Tex-Mex inspired chicken thighs, seasoned with Tex-Mex spice, s&p, once brown added fresh garlic, onion, red and orange pepper, sauteed a bit, then added most of a jar of hot chunky salsa, and about 3/4 cup of red wine. I had some chopped milder spicy chilies in the freezer, added about 1/2 a cup of those. When just about cooked I added a tbsp or so of dried parsley. Served over white rice, with sauteed zucchini and a couple of red radishes. After dinner DH asked me the name of the recipe, I said it doesn't have a name, he says, so you just made it up, told him yep. He said well it was good, very good, it was excellent. *Blush* Big Grin It really was good, He had white wine, I had red.
