problem 1. You are in short day onion country. None of them are good storage onions. 4-6 months at best. Best I have done is White Phantom, harvested in May, finished in early February. In general I have found that Grano types keep better than Granex types..
I concur with field dying for couple of days. Sprouting the is only problem that I have. I just hang them in bunches of 6 from the rafters of a storage shed. They do not begin to sprout until triggered by cool damp weather. That is when varietal differences begin show.
Concur that the refrigerator encourages sprouting so not for long term storage
