I have arrived at that system of nursery trays through experience. It makes my life easier when I can move things around in a straightforward way, several plants at once, without having to corral and wrangle all of them individually.
As for care, I guess the most important part (other than the overhead shade cloth, which is hugely consequential at this time of year) is knowing when to move plants up a size. Each week I go through a sort of census, looking at all these plants in 4-6" pots, trying to imagine what kind of roots they have going on, trying to guess who is being constrained by pot size and who can wait another week. It turns out these deliberate decisions about repotting matter a lot for keeping plants happy. And it helps that I combine that with a sort of meditation, or conscious appreciation of beauty, an equally deliberate awareness of the changes and developments in my plant world. It is healthy for humans and plants alike.
