I cut my vines in pieces that have the seed pods on and leave enough on an end that I can put in water like you would if you wanted to root it. If there are a lot I use a small rubber band to keep them together. I have used cups and wrote on them what flower it was. Now I am using small mason jars because I have them
I just put a mini blind label under the rubber band.
I have been doing this for years and my seeds always ripen. Just make sure they are nice fat pods.
You can change the water if it gets yucky.
The rubber band method holding the vines together makes it easier to keep different colors in the same container separated. I'll try and remember to take some picks tomorrow.
