Alex, I realized I never answered your question regarding the Ornithophora radicans.
The Coconut shell had a drainage hole drilled on the bottom, and - when I added the plant to the shell, I anchored it with a bit of coconut fiber. But after a few years the plant tilted and made such a dense clump outside of the shell, it made its own medium. It just used the Coconut shell as an anchor.
