Good Morning all,

Up and out early. Got the errands done and now just doing laundry and making some meals for the week. Going to cook up some Week Night Pepper Steak. Great and easy recipe I'll post below. We'll use up the last of our TJ's fried rice and some potstickers and egg rolls for the sides. That will be perfect for dinner tonight. Also going to whip up a batch of the Swedish meatballs. That along with some egg noodles and the last of the steamed asparagus will be great for tomorrow's dinner. Pics of these to come.

As for last night it was awesome. The lamb chops came out beautiful, tender and super delicious. Gave them a dollop of pesto. Some potatoes, asparagus and a big side salad of lettuce, tomato, basil and mozzarella rounded out dinner and used up a lot of fridge items that needed to be.

Sean...Culinary School dinner sounds delicious. Glad all was tasty. Sorry dessert wasn't the best. A bit disappointing but I can't offer up opinions or criticize as I rarely bake and am not a sweets/dessert person. I will say the presentation looks nice and they certainly weren't stingy with the portions. Personally, I'm jealous of that tasty duck and orange sauce you had for dinner. That looks yummy! I tip my hat to you.

Tom...Fresh strawberries are always a treat. Bet those pancakes were delicious. Hope you find some nice lamb chops. We used to get them regularly but for some reason, despite all the sheep raised here in AZ lamb doesn't make a frequent appearance in the grocery stores. When it does it is usually quite pricey unless on sale. We were lucky to find two packs of nice looking chops that just went on sale so we grabbed them. How is lamb priced in your area?

Anna...Beef soup/stew sounds delicious on a cool Fall day. Would be perfect with some of your homemade bread or rolls. Whistling

All...WEEKNIGHT PEPPER STEAK

INGREDIENTS:
1 packet of Brown Gravy Mix (I like Safeway's 'O' Organics brand; tastes good and doesn't read like
a chemistry set. McCormick's isn't bad either)
3/4 cup cold water
2 Tablespoons soy sauce
1 Tablespoon oyster sauce
1 generous teaspoon ground ginger
1 Tablespoon vegetable oil
1/2 teaspoon pepper (white, black or cayenne)
1 pound boneless beef sirloin steak; cut into thin strips
1 small onion (or 1/2 a large one); cut into thin wedges
1/2 medium green bell pepper; cut into thin strips or diced into 1/2" uniform pieces
1/2 medium red bell pepper; cut into thin strips or diced into 1/2" uniform pieces

INSTRUCTIONS:

1.) Mix the gravy mix, water, soy sauce, oyster sauce , pepper and ground ginger in a small bowl. Be sure to mix well so all ingredients are very well combined.

2.) Heat oil in a large skillet on medium-high heat.

3.) Add the steak; cook and stir continuously 2 minutes or until no longer pink.

4.) Add in the gravy mix, onion and the bell peppers.

5.) Bring to a boil and then reduce heat to low. Let simmer 7-9 minutes or until sauce is thickened, and serve over white rice.
