Pruning gardenias after they bloom can help maintain their shape and encourage future blooms. Since yours have finished blooming in late summer into fall, you can prune them now. Pruning won't cause them to lose next year's blooms; it should actually help encourage more robust flowering next season. Just be sure to prune any spent flowers and lightly shape the bushes without cutting back more than a third of the growth.
I know I have dirt under my fingernails.
