Good evening all,

Tom...Super delicious steak dinner. I tip my hat to you. I have to say I much prefer steaks broiled than grilled. To me the flavor just seems better and it really is my favorite way to cook a steak. Not thrilled about the clean up and the broiler pan afterwards though. Hilarious! Still dinner looks outrageously good. Very nice.

Sean.. Nice looking burrito. Steak is always a winner for burritos especially when paired with black beans. Big YUM there! Thumbs up

Tonight we did something a little different. Normally I am not a fan of cream sauces for pasta but this one I just love. I made Smoked Salmon Pasta. Simple recipe that comes together in about 30 minutes and is easy, elegant and perfect for a quick week night meal or sophisticated enough for company. Dave and I inhaled it. Drooling Made some steamed broccoli for the side and I just went ahead and finished up a small salad that was left from yesterday. Went well with this. Settled for a glass of red with dinner since I can't drink whites but really, really would have loved a good buttery-oak centric Chardonnay or a very lemony white Pinot Grigio with it. Garlic toast or a crunchy bread would have went well also but since I had a bagel this a.m. decided to skip the bread.

It uses few ingredients and comes together quickly which is what I love about this recipe. My only 'caveat' would be since it requires so few ingredients to make sure you use top quality ones that will shine flavor wise in this dish. Each flavor is definitely highlighted in this dish. So it was worth the little extra we paid for the really good quality smoked salmon and capers at TJ's. Also I got a very fresh pint of heavy cream and some fresh dill. Will admit to tossing in some finely chopped Portobella mushroom. Had a little leftover from the Greek Stuffed Mushrooms so I just added it. Tasted great and didn't detract at all. Big squeeze of lemon to finish and dinner was served.
Will also say that this dish does NOT require any salt added to it. The capers and smoked salmon were both sufficiently salty enough. Did add a little extra cayenne to it.

Wish I could take sole credit for this dish but it is a Cuisine At Home recipe.

SMOKED SALMON PASTA

10 ounces of bow-tie, penne or rigatoni pasta
3/4 cup very finely sliced white onion
1 Tbsp. EVOO
1 cup heavy cream

2 Tablespoons chopped fresh dill
1 Tablespoon fresh squeezed lemon juice
1/2 teaspoon pepper (black or cayenne is fine)

INSTRUCTIONS
1.) Boil salted water for the pasta. Cook pasta according to package direction's. Rinse, drain and set aside.
2.) Saute the onion in EVOO in a deep skillet on medium-high heat for 3 minutes.
3.) Add cream and capers; cook until liquid is slightly reduced
4.) Remove skillet from the heat. Add in the salmon, dill, lemon juices and cooked pasta to the cream sauce.
