If they're hardy to your area, just pot them in regular potting mix in gallon pots (or whatever size they'll fit in) and tuck them in a protected spot outdoors—basement or garage could work, too. Peat moss might be okay, but that risks getting waterlogged if it snows or rains. Plant when your beds are ready. They can last quite awhile like that. Knowing what plants you have and how big they are might elicit more specific advice.
