Depending on how much room you have, either a vertical (eg https://extension.okstate.edu/...) or horizontal hydroponic garden might work for you. There are lots of instruction videos on You Tube. Settle for just greens, and you should be able to round out your away diet - maybe even bring salad ingredients home.
Or, you could set up a tier of potted plants under lights. It doesn't take up much space and brightens up a basement flat like nothing else. https://www.amazon.ca/Bamworld...
Sorry for the advertising; you can easily make the stand yourself and use recycled pots.
