Lettuce and spinach like cool weather. I have not had much luck with spinach in a hydroponic tank, but lettuce did okay; mustard, beet greens and kale were my best crops. you might also consider strawberries.
For carrots, you definitely need earth and deep container. 5gallon bins could work.
Do a little research and decide what's best for your space and lifestyle.
