Leeks grow well here in soggy Hawaii!!! I replant the roots, as well.

Last year I had too many leeks...so I cut the whole leek into rounds and put them in the dehydrator. When nice and dry (not very long) I put them in the blender and made powder out of them and use it to flavor EVERYthing from salads to soups...
It's all about choices.
