If your camera is not just a point and shoot, you should be able to set it so it takes three pictures of the same thing at different exposure values. You have to click on the picture to see what I'm talking about.

Also I have found that if you have a camera you can set for different types of light such as Cloudy, Sun, Incandescent, Flash etc. that you can play around with those which give you different color values. If I set mine on flash, even though I'm not using the flash, it usually corrects the colors closer to normal.
