I'm glad you mentioned that! My summers are so mild that I never knew. I[ve only had one Bok Choy bolt on me in its first year. Any that I leave in the ground over winter burst into bloom and then seed early the next spring.
Everything I read says that the green tatsoi are cold hardy - one source said on cultivar was hardy down to 15F. But I've never tested that, either.
I have a few red or red-violet tatsoi varieties, that don't boast about either heat or cold tolerance. Maybe those tend to be fussier (guessing).
