Well I did more research, all signs pointed to wild carrot, especially the smell of the top, so I tried the spit test. Tasted more like carrots than carrots do!
Even had a hint of heat to it... Sadly they were very tough, especially the inner core of the root, I guess these are pretty old... Maybe I could grind em in the blender...

Just so you you know, poison hemlock is one of the number 1 invasive plants in my area, it's absolutely rampant, I don't think I could mistake it for any plant, the look, feel and especially the smell are so distinctive, and the 2nd year plants grow and bolt so fast!
Hateful stuff!
The state drives around with big spray trucks, nuking it and a few other things (everything...these idiots just spray the day lights outta the roadside) they use 24D, I think they must use 24D ester, it drifts in big clouds, you can smell it, if even seen it curl fresh candles on pine trees that were 100'sof yards away, maybe half a mile...
