I cannot answer if all sunflower seeds are edible or not, but I can tell you there are sunflower seeds that taste better than others. I purchase organically grown edible sunflower seeds from different sources and I definitively have a favourite one. Unfortunately, they are only labeled as 'sunflower seeds', but they vary slightly in shape and greatly in taste.
