I would say the red cedar would make a wonderful bonsai! It would be beautiful and could be easily shaped into curves and unusual angles as well. I hope you try it and if you do, share pictures with us. The size you have sounds like a perfect starting size.

You've inspired me to try one for myself, I think, and I just happen to have two beautiful eastern red cedars growing in my yard!
