I was given some seedlings and was told that they are arugula. I've never seen arugula like this and google or PlantSnap can't identify either. Can anyone please help me identify what variety of arugula?

Looks like bolting arugula to me.
drought, or other stress would make it goes pink like that

I agree bolting and dry. Their culinary use has passed for this season. Let them go to seed for next year.

Edit to add. They look damp, but I suspect they got dry previously. You could try cutting off the bloom stalks and try to nurture them back to leafy health, but it's getting late. They are an early, cool weather crop.
