My new plumeria's leaves are yellowing and dropping off after transplanting them to a bigger pot. Is this normal? What should I be doing at this point?

It is normal. I usually remove all big leaves when transplanting and just leaving the smaller one. This allows the plant to concentrate getting used to the new home without having to worry about feeding the big leaves.

Were they last years leaves? Honestly, I don't do anything As far as shock treatment. Plumeria don't really care that much. They rebound just fine. I don't know your location either, but most places February is too early to be transplanting. Plants should basically be dormant at this time.
Look deep into nature, and then you will understand everything better.
