The roots are still few and short, but should I go ahead and pot them up anyway?

Chelle, I would -- I don't think you want to let the roots grow in the water too long or they don't like growing in soil...

Okay, we'll pot 'em up. This is a fun experiment that my son is enjoying as well.

I wonder how many generations a person could raise that way -- by rooting, growing, then cutting the root end off again... and again...

The possibilities are definitely intriguing! You'd think at some point the plants would turn bitter and bolt, but if conditions were kept just right for fast leafy growth...who knows?
