Hi Dubs, and welcome to NGA. So glad you found your way here.

It depends on what type of sedum you plan on growing. There are the tender,more tropical sedum and there are the winter hardy types of sedum. The winter hardy types do need a dormancy time.
What are your winters like, where in the world do you live? That type of information will help in answering your question.
