OK ... in the message box, you will see that the quote material starts with code in brackets. Then there's the content you are quoting. It ends with the code in brackets with a back slash in front of the code.
You can delete anything between the beginning bracketed code and the ending bracketed code.
That way you can quote just part of a message.
When you get done typing your response, you can hit the PREVIEW button. You will see what will appear once you hit the FINISHED button. If you need to make corrections, just drop down to where you typed your message and fix it. You can hit PREVIEW again and you will see your corrected post.
