When I have more snack size tomatoes than I can use in salad, or eat out of hand I put them on a fritatta for breakfast

And at the end of the season when I'm using up the last big flush of fruit, I cut them in half or quarters, roast them in the toaster oven for about 25min. at 325deg. and put them in a container in the freezer. That way I have them for use on pizza or fritattas all year round, and they're delicious. I don't like anything canned because they're mushy and lose so much flavor, but these taste rich and delicious and aren't mushy. Doesn't work well for slicer tomatoes, though, they're too juicy.
