Could I suggest that you put the shelf upright posts on castors. It would have the dual benefit of allowing you to wheel them outside when the weather permitted it, and keep the posts off the floor for when you water the pots so the posts don't sit in water.
In addition , if you got plastic trays to sit on the shelves you would be able to put grit and water in them to provide a more humid environment around the pots.
If you added copper tape to the legs you would make it more difficult for slugs and snails to climb the legs.
If you add those yellow sticky panels to the legs you will catch the creepers, probably only need one set per year.
If you put silver foil behind the pots , attached to the uprights you could equalise the lighting for free.
You could run drip hosing across the pots attached to the edges and water pretty simply.
Really like the ideas though, looks like a nice project, and I will certainly enjoy turning it over in my mind as I travel this week. If you can't garden, you can enjoy thinking about gardening, and this project has a lot going for it outside of the orchid context as well.
