Here's one of my garden traditions. Right about now, when nights are beginning to be a bit cool in my zone: snip tall sections off coleus, strip the bottom leaves, and put them in vases/jars as if arranging a bouquet. (Of course I root some cuttings to keep indoors for winter but there is so much great foliage left over.)
These make beautiful arrangements for fall! Add some mint and lemon balm cuttings for a dash of green as well.
If I keep changing the water and picking off dead leaves this can last a long time. Even lasts long enough to work them into decorations for thanksgiving and even my Christmas party. Especially the reddish and mostly green ones, they're great for Christmas.
