They are about 3 weeks old and need to be up-potted. Already running low on pots.

What do you all make with your eggplant? I really enjoy eggplant parmesan and adding diced eggplant to a basic pasta sauce.

I am very new to eggplant cooking. I found Armenian Lentil Soup which uses tomato sauce and eggplant, the eggplant just sort of melts into the soup.
Epicurious, I think and I can't read or post it now without subscribing.
I made an Alton Brown's skillet eggplant recipe and it was delicious, next time I made it, meh.
A pizza place here puts cubes of it on a pizza, that's really good.

Eggplant Parmesan is my standard use of eggplants.

Accidentally knocked the tray of eggplant seedlings onto the basement floor. Have salvaged them and potted them up!

I only have Fairy Tale, but at least I managed to snag 4 of them. Last year 0 eggplant because I couldn't find a single plant anywhere in Lubbock. Apparently eggplant is not a Thang in Lubbock.

We thought we were going to be moving this spring so I didn't try to start any, then it turned out we aren't moving after all and have no idea when we might BE moving (but we WILL be moving sometime). I was lucky to find the one variety, all things considered.

I love eggplant. I eat it in stir fry, curried, and slathered in cheese with a light sprinkling of marinara sauce. Brinjal pickle ain't bad, either.

I sent in my orders for seeds this year (mostly stuff that can be direct seeded). I went ahead and ordered some stuff for next year so I'll have it on hand to start this winter. But I got a bunch of different kinds of eggplant so I don't have to search for plants next time, wherever I end up.

Typically I order from different place in a round robin sort of way, and I have to start that over this year because my seed is so old now from the last time I tried to garden (while I was still sick).

This year I ordered from Strictly Medicinal Seeds, Pinetree Garden, and Seeds of India. Next year it'll be Johnny's, Baker Creek, and Kitazawa. The more eggplant, the better!

Sadly no eggplants in my veggie garden this year.

Second year in the row eggplants are ripping faster than tomatoes.

Not that I am complaining, but I have a lot of eggplants. Two months we are eating them literally every day and they are continuously producing.
